Maize Biscuits (Biscoitos de Maisena)

A childhood delight…

when you grow up in Brazil.

Sprinkled with some coconut milk powder and a drizzle of molasses

1 cup of maize

1 cup of rice flour (or any other gluten-free flour)

1 cup of coconut milk powder

4 tablespoons of molasses

5 tablespoons of vegan spread or margarine.

 

Mix everything in a bowl. Knead the dough until it’s uniform.

Roll the dough in a cylindrical form to cut it in to no more than 1-cm-thick slices.

Roll the slices into balls then place them on a non-sticking baking tray (or use baking paper).

With a fork, gently squash each ball to make them in a biscuit shape.

Bake for 20-25 minutes at 150-160°C

Once they are baked, wait for the to cool down before serving. They go great with black coffee!
